So, let me explain the header. Today I was wandering around a local deli looking desperately for something for supper, you probably know this feeling, and I came across a pack of giant wholemeal couscous. This made me instantly think of a couscous salad filled with a rainbow array of vegetables (I know I’m such a food nerd)! I have attached a photo for anyone interested :). So I rustled up a couscous salad and had it on a bed of lettuce, sprinkled with some extra mixed seeds and a crumbling of feta. Below is the ingredient list, the only thing you have to cook are the sweet potatoes and everything else should just be chopped up and chucked in! It’s a dream recipe for a day where you just want something quick and healthy.
Ingredients (serves 4):
Giant wholemeal couscous prepared according to instructions on packet
2 sweet potatoes
200g cherry tomatoes
3 spring onions
1/2 a cucumber
2 red peppers
Juice of 2 lemons
Salt
Pepper
Good glug of olive oil
30g feta crumbled very small and extra to top the salad
70g mixed seeds and extra to top
50g chopped parsley
50g chopped mint
1 lettuce head to form base of dish
