Hi everyone, I made homemade ravioli for my family for dinner tonight and it was delicious! But wait, before you click off while rolling your eyes at stuck up ’chefs’ (if I can call myself that) flaunting their knowledge, let me tell you this. In March this year I went to a pasta making course at Leith’s cooking school in London and thanks to an enthusiastic Italian woman called Ursula, I have discovered how easy and yummy homemade pasta is. So tonight I made spinach and ricotta ravioli completely out of store cupboard ingredients. Below are thee ingredients needed and do comment if you want the method, Ursula taught me an authentic way of making pasta handed down from her Nonna! Ingredients (serves 5): 200g semolina, 200g ‘00 flour, 4 eggs, pinch of salt, dash of olive oil. For sauce: 100g hazelnuts, 200g cherry tomatoes, generous knob of butter, 2 cloves garlic, splash of olive oil, grating of Parmesan. I topped the ravioli with a drizzle of oil and a sprinkle more Parmesan. I attached a pic hoping to tempt you to make it too! I’ll be back for an update tomorrow with a new recipe so stay tuned.
