This morning I was feeling indulgent and so made some fabulous American style blueberry pancakes. These pancakes are perfect for a special occasion, sweet but also fairly healthy. I can’t stress enough how much I hope you try them, they will blow your mind! I’ve always struggled making American pancakes, partly because I’m a true Brit at heart and partly because mine always somehow turn out stodgy. However, these pancakes are light, fluffy and healthy. I can’t recommend them enough, they are the best pancakes I’ve ever had. Please try them and comment your thoughts! Ingredients (serves 5):
128g flour (1 cup)
64g polenta/semolina/ (1/2 cup)
50g sugar (1/4 cup)
2 tsp baking powder
1 tsp salt
350ml plain yoghurt (1 1/2 cups)
60ml semi-skimmed milk(1/4 cup)
45ml melted butter (1 1/2 oz)
1 large egg
Approx 2 cups blueberries
