Easiest healthy pasta supper recipe-perfect for after a long day!

Hi everyone,

Today I made an absolutely delicious fennel and olive spaghetti with mackerel adapted from a Thomasina Miers recipe. It’s yummy, easy and quick to make and really healthy. I hope you all love it as much as I do, I’m sure you will. I would advise you to make it asap, it’s perfect for after a long day at work when you want to make something quick and healthy so you don’t feel bad when eating takeout again! As usual, I’ve attached the ingredients, but message for the method.

Ingredients (serves 4):

4 mackerel fillets

4 garlic cloves

4 anchovy fillets

700g breadcrumbs

320g spaghetti

100ml white wine (I used vermouth)

3 fennel heads

Fennel fronds

30 black olives

Salt and pepper

Olive oil

1 lemon

Parsley
