I made the best butternut squash dhal for dinner today! It’s adapted from the Diana Henry recipe and is healthy and simple to make. I had it with flatbread and it was absolutely delicious. It’s a lovely warming meal, but is comforting all year around. It’s like drinking tea in summer, it weirdly makes you feel so much better. Definitely one of my go to meals and it’s amazing. Ingredients (serves 6):
3 tbsp olive oil
500g butternut squash/ sweet potatoes
1 large onion
1 can chopped tomatoes
2 cloves garlic
4 cm root ginger
1 1/2 tsp dried chilli flakes
2 1/2 tsp cumin
1 tsp turmeric
225g red lentils
Coriander to top
